there was a section on sportsbook.com that had the percentages. the address changed or its gone as of maybe a year ago. i had it bookmarked and the mark stopped working. it was very imformative tool. i never really tried to hunt it down so you may be able to find something becuase they do exsist. let us know what ya got.
sportsinsights.com and caribsports.com are probably your best shots at finding out what the percentages are on individual games. However, I must warn you that fading the public will neither increase nor decrease your win percentage rate, and the percentages on these sites tend to be inaccurate. So, there basically is no trustworthy source that tells you where all the money is going. The books don't want you to know about it.
